Week 2: Nutrition, Broths and Thickeners
High quality pasta has higher protein. Brands like Molisana and Belallo are fancy but also check the label. They have more protein than some varieties. They present well for having guests. Both brands have pasta cut in fun shapes for kids.
Cooking pasta in a bone broth or vegetable can seem like a waste of expensive broth… but this packs the pasta with nutrients. You can also save the broth + pasta water combo as a thickener to make sauces and soups. Label the broth with masking tape and put the date on it. It will stay good in the fridge for 4 days about. (google it for best by date: how long does pasta water + bone broth stay good in the fridge)
Speaking of thickeners and kids… do you have a kid like mine who will only eat egg whites? Save the yolks, put it in a jar (can repurpose food jars from food packaging or buy new) and they keep for 1-2 days. You can use these as a thicker as well.
